These antioxidants along with the fiber in sweet potatoes can also improve your gut health. Research has found that they may promote the growth of healthy gut bacteria, including certain Bifidobacterium and Lactobacillus species.
When your gut has enough of these good bacteria you have better overall gut health, as well as a lower incidence of problems like IBS and infectious diarrhea.
One of the particular antioxidants found in sweet potatoes is called beta-carotene. This antioxidant is also responsible for the orange color of orange sweet potatoes!
Beta-carotene supports eye health. Thats because your body converts the beta-carotene to vitamin A which is used to form light-detecting receptors in your eyes.
