Serves 4


  • 2 medium-sized sweet potatoes
  • 1 tsp olive oil
  • 4 large eggs
  • 1 dash of salt
  • 1 dash of pepper
  • 1 medium tomato, diced
  • 1 Tbsp fresh chives

1) Preheat the oven to 425F. Wash sweet potatoes and stab them several times with a fork. Coat in a thin layer of olive oil and place into oven.

2) Bake sweet potatoes for 40-50 minutes, until soft. Remove from oven and let cool slightly.

3) Once cool, slice sweet potatoes down the middle lengthwise. Gently scoop out potato, mash, and return to potatoes.

4) Make a small cave in each potato. Crack an egg gently into each egg, then garnish with diced tomatoes.

5) Return to oven for ten minutes, or until yolk is set to desired doneness. Sprinkle with salt and pepper and chives, and serve hot.
