FTH’s Vegan Cinnamon Spice Peach Cake

Serves 4 (with leftovers)

Ingredients:

  • 1 14.5-oz can of peaches
  • 1 ½ cup whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup white sugar
  • 1 cup non-dairy milk
  • ½ cup coconut oil
  • 1 tsp cinnamon
  • 2 Tbsp brown sugar
  • 2 tsp vanilla extract

Directions:

1) Preheat the oven to 350-F. Open the can of peaches and drain off the juice. Empty the peaches into a greased 8”x8” cake pan. Sprinkle with cinnamon and brown sugar.

2) In a mixing bowl, sift together the flour, baking soda, salt, and white sugar. Add the non-dairy milk. Melt the coconut oil and add to the mix. Add the vanilla. Stir to combine.

3) Pour into the cake pan and bake for 25-30 minutes, or until a toothpick comes out clean. Serve immediately.
