FTHs Vegan Cinnamon Spice Peach Cake
Serves 4 (with leftovers)
- 1 14.5-oz can of peaches
- 1 cup whole wheat flour
- 1 tsp baking soda
- tsp salt
- cup white sugar
- 1 cup non-dairy milk
- cup coconut oil
- 1 tsp cinnamon
- 2 Tbsp brown sugar
- 2 tsp vanilla extract
1) Preheat the oven to 350-F. Open the can of peaches and drain off the juice. Empty the peaches into a greased 8x8 cake pan. Sprinkle with cinnamon and brown sugar.
2) In a mixing bowl, sift together the flour, baking soda, salt, and white sugar. Add the non-dairy milk. Melt the coconut oil and add to the mix. Add the vanilla. Stir to combine.
3) Pour into the cake pan and bake for 25-30 minutes, or until a toothpick comes out clean. Serve immediately.
