FTH’s Refreshing Summer Shrimp Salad

Serves 4

Ingredients:

  • 1 lb. raw shrimp, peeled and deveined
  • 1 Tbsp olive oil
  • 2 tsp cumin
  • 1 cup frozen or fresh corn
  • 1 dry pint cherry tomatoes
  • 1 large avocado
  • ½ cup fresh cilantro
  • 1 lemon, juiced
  • Salt and pepper to taste

Directions:

1) In a large skillet, heat the olive oil. Prepare shrimp by adding it to the hot skillet, then add cumin. Cook until it’s pink and opaque, then remove from heat. 

2) Add corn to skillet and cook until tender, about 3 minutes. Let cool.

3) Chop tomatoes in half, then add to a large, non-metal mixing bowl. Slice the avocado into bite-sized pieces, then add to the bowl. Add cilantro and the juice of one lemon. Add the shrimp and the corn, then salt and pepper to taste. Enjoy!
