FTH’s Honey Oatmeal Quick Bread
Serves 4 (with leftovers)
- 1 cup whole wheat flour
- 1 cup rolled oats
- ½ tsp salt
- 2 tsp baking powder
- 2 Tbsp honey
- 2 Tbsp coconut oil*
- 1 cup skim milk*
1) Preheat the oven to 450-F. In a mixing bowl, sift together the oats, whole wheat flour, salt, and baking powder.
2) Add the honey and coconut milk, then stir in the milk. Mix until just combined and there are no visible lumps left. Let sit for ten minutes, until oats are softened.
3) Pour into a greased loaf pan and let bake for 20 minutes, or until it sounds hollow when tapped on the top. Let cool, or serve warm from the oven.
- You can use reconstituted milk powder in lieu of fresh milk.
- Any heart-healthy vegetable oil is fine instead of coconut oil.
