FTHs Filling Sweet Potato Stew
- 3 cups water
- 1 8-oz can tomato sauce
- 1 lb ground chicken
- 2 medium sweet potatoes
- 1 medium onion
- 1 clove garlic
- 1 tsp thyme
- 1/8 tsp cayenne pepper
- 2 Tbsp raisins
1) In a large saucepan, brown your ground chicken until cooked through.
2) While the chicken is cooking, dice your sweet potatoes into bite-sized chunks. Chop onion and mince garlic. Add to browned chicken, then add raisins.
3) Add water and tomato sauce, then bring to a boil. Reduce to a simmer, then add thyme and cayenne pepper. Cook until sweet potatoes are soft, about 10-15 minutes.
4) Remove from heat and serve hot.
