Serves 4
Ingredients:
- 8 oz whole wheat angel hair pasta
- 2 cups carrots
- cup peanut butter
- 3 Tbsp light soy sauce
- tsp ginger powder
- tsp garlic powder
- 1 Tbsp brown sugar
- cup chopped peanuts
Directions:
1) Bring a pot of water to a boil. Chop carrots. Add whole wheat angel hair pasta and carrots to boiling water and cook until al dente, about 4 minutes. Remove from heat and drain.
2) In a saucepan, combine peanut butter with the soy sauce. Stir until peanut butter is melted. Add ginger, garlic, and brown sugar. Heat until just simmering. Remove from heat.
3) Toss sauce with noodles until combined. Garnish with chopped peanuts. Serve hot.
