FTHs Lazy Gourmet Tilapia Filets With Couscous
Serves 4
Ingredients:
- 1 cup dry whole-grain couscous
- 1 cup low-sodium vegetable broth
- 4 4-oz tilapia filets
- 2 large red tomatoes
- 1 small zucchini
- 1 small yellow squash
- 2 cloves garlic, minced
- tsp salt (to taste)
- tsp black pepper
- 1 medium lemon
Directions:
For the couscous:
1) Prepare couscous by bringing broth to a boil. Add couscous, remove heat, cover with lid, let sit.
2) Fluff before serving.
For the fish:
1) Preheat the oven to 400-F. Grab four 12x12 pieces of aluminum foil and set them aside. Slice the tomatoes, zucchini, and yellow squash into bite-sized pieces, then place onto foil.
2) Top the vegetables with a piece of fish, then season with garlic, salt, and pepper. Add 1-2 slices of lemon per packet, then fold the foil closed.
3) Place each foil packet onto a baking sheet. Cook for 15-20 minutes, until veggies and fish are tender. Serve with couscous.
