FTHs One-Pan Roast Chicken Breast With Vegetables

Serves 4


  • 2 Tbsp olive oil
  • 2 Tbsp Italian seasoning
  • 1 dash salt (to taste)
  • 4 boneless, skinless chicken breasts
  • 1 lbs. sweet potatoes
  • lb. brussels sprouts

1) Preheat the oven to 400-F. Lightly grease a baking pan with about tsp olive oil. 

2) On a cutting board, carefully cut the Brussels sprouts in half. Lay them out on the baking sheet. On the same cutting board, carefully peel and chop sweet potatoes into bite-sized pieces. Arrange the sweet potatoes on the pan as well.

3) Layer the chicken breasts on top of the vegetables, then drizzle with remaining olive oil. Sprinkle with Italian seasoning.

4) Bake for 15 minutes, then flip chicken and stir veggies and potatoes. Cook for another 10-15 minutes or until chicken is done and veggies are golden and roasted. Serve hot.
