Remember when we all had a hard time finding basic pantry staples in the spring of 2020?

That’s one of the many reasons I love today’s recipe. It’s delicious… easy to make… and goes with SO many meals…

But it doesn’t require one ingredient that I often run out of: eggs.

In addition to not requiring any eggs… this recipe is also very forgiving if you need to make a couple of ingredient substitutions. So feel free to use whatever you have!

FTH’s Comforting Cornbread (No Eggs Required)

Serves 4 (with leftovers)

Ingredients:

  • 1 cup whole-grain cornmeal
  • 1 cup whole wheat flour
  • ¼ cup sugar
  • ½ tsp salt
  • 2 tsp baking powder
  • ¼ cup coconut oil*
  • 1 cup skim milk*

Directions:

1) Preheat the oven to 400-F. In a mixing bowl, stir together the cornmeal, flour, baking powder, and salt.

2) Add the sugar and the coconut oil. Stir in milk and mix until just combined. Pour into a greased 8×8 cake pan.

3) Bake in the oven for 20-25 minutes, until a toothpick comes out clean. Serve hot.

Recipe Notes:

  • You can use any heart-healthy oil in place of coconut oil. My personal go-to replacement for making cornbread is canola oil.

  • If you don’t have any “normal” milk, don’t worry. Reconstituted milk powder or non-dairy milk (like almond milk) can be used in place of milk.
  • No whole wheat flour? You can use regular all-purpose flour instead.
