FTHs Comforting Cornbread (No Eggs Required)
Serves 4 (with leftovers)
Ingredients:
- 1 cup whole-grain cornmeal
- 1 cup whole wheat flour
- cup sugar
- tsp salt
- 2 tsp baking powder
- cup coconut oil*
- 1 cup skim milk*
Directions:
1) Preheat the oven to 400-F. In a mixing bowl, stir together the cornmeal, flour, baking powder, and salt.
2) Add the sugar and the coconut oil. Stir in milk and mix until just combined. Pour into a greased 8×8 cake pan.
3) Bake in the oven for 20-25 minutes, until a toothpick comes out clean. Serve hot.
Recipe Notes:
- You can use any heart-healthy oil in place of coconut oil. My personal go-to replacement for making cornbread is canola oil.
- If you dont have any normal milk, dont worry. Reconstituted milk powder or non-dairy milk (like almond milk) can be used in place of milk.
- No whole wheat flour? You can use regular all-purpose flour instead.
