It’s really the worst when I’m really CRAVING a certain food… and I look up the recipe… only to find that I don’t have all of the ingredients I need.
Then I have to decide if I’m going to do without that food I want SO BAD… or if I really want it enough to go to the grocery store right then.
That’s one of the many reasons I love today’s recipe. It’s delicious… easy to make… and goes with SO many meals…
But it doesn’t require one ingredient that I often run out of: eggs.
So, if you’ve been craving some delicious, warm cornbread… but you’ve run out of eggs (or are saving your eggs for something else)… you can still make this tasty recipe.

Cornbread is one of those recipes that can be dressed up in a variety of ways. You can crumble it upon a bowl of spicy chili for extra staying power and flavor.
Or it can be a perfect side for a summer BBQ… especially if you have some delicious ribs or pulled pork.
No matter how you serve it, though, you’ll wish you made more.
And, of course, it can be ready in just about thirty minutes. You really can’t beat that!

Here’s how to do it:
FTH’s Comforting Cornbread (No Eggs Required)
Serves 4 (with leftovers)
- 1 cup whole-grain cornmeal
- 1 cup whole wheat flour
- ¼ cup sugar
- ½ tsp salt
- 2 tsp baking powder
- ¼ cup coconut oil*
- 1 cup skim milk*
1) Preheat the oven to 400-F. In a mixing bowl, stir together the cornmeal, flour, baking powder, and salt.
2) Add the sugar and the coconut oil. Stir in milk and mix until just combined. Pour into a greased 8×8 cake pan.
3) Bake in the oven for 20-25 minutes, until a toothpick comes out clean. Serve hot.
- You can use any heart-healthy oil in place of coconut oil. My personal go-to replacement for making cornbread is canola oil.
- If you don’t have any “normal” milk, don’t worry. Reconstituted milk powder or non-dairy milk (like almond milk) can be used in place of milk.
- No whole wheat flour? You can use regular all-purpose flour instead.

One of the genius things of this recipe is that you can easily make some ingredient substitutions to fit what’s currently in your pantry.
No milk? Powdered milk will do just fine.
No eggs? This recipe doesn’t call for them anyway!
No coconut oil? Any healthy oil will do.
No “normal” sugar? Or maybe you’re trying to cut down your usage of refined sugar?
