  • 2 oz whole-grain farfalle pasta
  • 2 tsp olive oil
  • cup artichoke hearts, chopped
  • cup red onion, sliced
  • cup peas
  • 1 Tbsp fresh mint, chopped


  1. Cook pasta to al dente as directed. Once cooked, drain.
  2. Toss cooked pasta with olive oil, veggies, and mint.
  3. Season with salt and pepper to taste, and then chow down!
