Ingredients:
- 2 oz whole-grain farfalle pasta
- 2 tsp olive oil
- cup artichoke hearts, chopped
- cup red onion, sliced
- cup peas
- 1 Tbsp fresh mint, chopped
Directions:
- Cook pasta to al dente as directed. Once cooked, drain.
- Toss cooked pasta with olive oil, veggies, and mint.
- Season with salt and pepper to taste, and then chow down!
